The pastry skin of this mooncake is handmade and created by two types of dough, which is called "oil dough" and "water dough". Each dough is rolled out individually per mooncake, stacked in order to create the flaky layers. Instead of using lard, premium and good quality butter is used to get the flakiness and buttery taste.
