Guanciale or more commonly known as the Jowl Bacon, is made by using the pork cheeks. This charcuterie wonder has been traditionally a must have for Central Italians. Guanciale gives an enormous amount of porky fragrant to the dishes and it is so good that the Italians had been calling Guanciale the magic bacon.
